🍞 Sourdough Ricotta Toast with Arbequina, Roasted Grapes & Thyme

⭐ Why Arbequina Works:
Its fruitiness echoes the sweetness of roasted grapes, while its softness enhances the creamy ricotta without overpowering. Arbequina ties all the elements together with subtle elegance.

🍽️ Ingredients (Serves 2):
2 slices rustic sourdough bread

1/2 cup ricotta cheese (fresh, unsalted)

1 cup seedless red grapes

1 tsp fresh thyme leaves

2 tsp honey (optional)

2 tbsp Arbequina olive oil

Flaky sea salt & black pepper

🔥 Instructions:
Roast the Grapes:
Preheat oven to 375°F (190°C). Toss grapes with 1 tbsp Arbequina and thyme. Roast on a parchment-lined sheet for 15–18 min until blistered and juicy.

Toast the Bread:
Brush sourdough slices with Arbequina and toast in a hot skillet or oven until golden and crisp.

Assemble:
Spread ricotta generously on warm toast. Top with roasted grapes, drizzle with remaining Arbequina, a touch of honey (if using), and finish with flaky salt and cracked black pepper.
