We pick our olives at their peak, not when they’re overripe. This means lower yield, but far higher flavor and antioxidant richness.

✅ Hand-Picked for Purity
Our harvest is done by hand. No shaking, no bruising — just respect for the fruit and the tree.

✅ Cold-Pressed at 23°C
We press within hours of harvest, at a stable 23°C to protect delicate aromas, polyphenols, and freshness.

✅ Never Blended (unless stated)
Each oil is varietal-specific or carefully crafted from selected blends — no industrial mixing, ever.

✅ Low Acidity. High Standards.
All our oils test far below the 0.8% threshold. Most are under 0.2%. That’s not just EVOO — that’s Solivera.
