🐟 1. Seared Sea Bass with Herbed Olive Oil & Citrus Zest
🧡 Why it works: The fruity notes of Arbequina and Chiquitita pair beautifully with citrus and fish, while Picual gives just enough depth to stand up to the crisp skin.
Ingredients:
2 sea bass fillets (skin-on)
Zest of 1 orange & 1 lemon
2 tbsp chopped fresh parsley
1 garlic clove, minced
3 tbsp Master’s Cut
Salt & pepper
Instructions:
Mix Master’s Cut with citrus zest, garlic, parsley, salt, and pepper. Let it infuse for 10 minutes.
Pat the sea bass dry and season.
Sear skin-side down in a hot pan with 1 tbsp oil until crispy, then flip and cook through.
Serve drizzled with the herbed citrus olive oil.
