🍆 Eggplant Carpaccio with Orígenes, Sumac & Labneh

⭐ Why it works:
The fruitiness of Orígenes gives an elegant contrast to the roasted eggplant. The sumac-labneli base and the blend drizzled on top create a Middle Eastern-Mediterranean synthesis.

🍽️ Ingredients (Serves 2–3):
2 medium eggplants

1/2 cup labneh or thick yogurt

1 tsp sumac

3 tbsp Orígenes Blend

Salt, chili flakes, lemon zest

Mint & pomegranate to garnish

🔥 Instructions:
Roast Eggplants: Char over flame or roast until soft. Slice thinly.

Plate: Spread labneh on plate. Layer eggplant slices. Sprinkle with sumac, zest, and chili.

Finish: Drizzle generously with Orígenes. Garnish with mint and pomegranate.
