Sweet Pea Purée with Chiquitita & Mint over Seared Scallops

⭐ Why Chiquitita Works:
Its soft, fruity sweetness enhances the natural sweetness of peas and seafood, while its almond-like smoothness adds depth to the purée without overpowering the scallops.

🍽️ Ingredients (Serves 2):
6 sea scallops, cleaned and dried

1 tbsp Chiquitita olive oil (for searing)

Sea salt, white pepper

For the pea purée:

1 1/2 cups frozen peas

1/4 cup vegetable broth

1 tbsp fresh mint leaves

1 tbsp Chiquitita olive oil

Salt, lemon zest

🔥 Instructions:
Make the Pea Purée:
Boil peas for 2 minutes, then shock in ice water. Blend with mint, broth, lemon zest, and Chiquitita until silky. Season with salt. Keep warm.

Sear Scallops:
Heat oil in a nonstick pan. Sear scallops for 2 minutes on each side until golden crust forms. Season with sea salt.

Plate:
Spoon pea purée onto plates. Place scallops on top. Drizzle with a final touch of Chiquitita.
